Italian sausage (spicy)
3-4 Garlic cloves
1 white onion
4 large Idaho potatoes
1 large chicken stock
Dice onion and finely chop Garlic, add avocado to large pan and cook until translucent.
Add Italian sausage and cook through, drain and set aside.
Add chicken stock an water to pot.
Peel and chop potatoes, allow to cook through.
Add Italian sausage, salt and pepper.
Add Kale, once wilted add coconut milk.
(Dairy option add heavy cream)
Garnish with diced bacon.
